In our research, we compare various aqueous extraction methods – infusions, decoctions, decoctions and macerates – analysing the role of temperature and time in shaping antioxidant potential.
The research results indicate that:
- "hot" methods are often the most effective ones,
- preparation time is crucial for the stability of phytochemicals,
- a conscious approach to extraction is crucial.

Katarzyna Szafrańska, Associate Professor at the University of Lodz, based on chapters of a scientific monograph prepared by the project participants, presenting the results of research conducted as part of the Ministry of Science and Higher Education project “Science for Society II”.
The materials have been developed in a popular science format, using tools based on artificial intelligence (AI), to increase the accessibility of the content to a wide audience.
